How to store cellared wine
After being stored for a period of time, the white liquor produced by brewing equipment will become more mellow and soft. However, it doesn't mean that we can just put the liquor in the cellar and ignore it. Proper management is also crucial.
1. Different types of raw liquor with various flavors should not be arbitrarily mixed without distinguishing their quality, as this cannot guarantee the quality.
2. Containers should be clearly labeled, and detailed inventory records should be established, specifying the batch number, production date, flavor characteristics of the wine, gross weight, net weight, alcohol content, etc.
After storing the original liquor, it is necessary to regularly taste and recheck it, adjust its grade, and keep a clear understanding of the inventory liquor.
Regarding containers:
Generally speaking, ceramic jars are preferred for storing wine. Ceramic containers have good air permeability, allowing for rapid oxidation, esterification, and reaction. The jar body contains many trace elements that can facilitate the binding of wine molecules, resulting in the incorporation of trace elements into the wine. At the same time, it automatically generates natural oxygen, which oxidizes and ages the beneficial substances in the wine.
Regarding Temperature
The ambient temperature for storing Baijiu should not exceed 30℃, with an ideal storage temperature of around 15-20℃. This temperature allows the liquor to age and mature. At higher temperatures, alcohol is prone to volatilization, which can easily lead to "alcohol loss"; at lower temperatures, the molecular activity of the liquor decreases, which is not conducive to physicochemical changes. Additionally, it is important to prevent excessive temperature fluctuations and maintain a constant temperature for the storage of liquor.
Remember, to enhance the quality of Baijiu and provide customers with delicious Baijiu, every detail must be attended to throughout the entire process, from material selection, fermentation, distillation using brewing equipment, to storing the liquor... Only by doing so can we brew excellent Baijiu.
