Why are most Baijiu alcohols typically 53% alcohol by volume?

The alcohol content of a drink is expressed as a percentage of the volume of ethanol it contains, typically stated as a volume ratio at 20 degrees Celsius. For example, a 50% alcohol drink means that out of 100 milliliters of the drink, 50 milliliters are ethanol. It should be noted that alcohol content can also be expressed as a weight ratio, and weight and volume ratios can be converted to each other.

For Baijiu, when the alcohol content is maintained at around 53%, the association between alcohol molecules and water molecules in Maotai Town Baijiu is relatively good. Coupled with the long storage period and stable storage conditions of sauce-flavored Baijiu, there are fewer free alcohol molecules in the wine. If stored for several years under sealed conditions, the sauce flavor remains rich and the taste is still excellent.

The alcohol content of Maotai Baijiu is generally maintained at around 53%. There have been Maotai Baijiu with 54% or 53±1% alcohol content in the past. With the gradual improvement of Maotai's production process, it has been confirmed that 53% is a standard for sauce-flavored Baijiu.

Moutai has also leveraged years of practical experience to demonstrate that "53% alcohol content" is a relatively scientific alcohol content for distilled liquor.

The flavor of sauce-aroma Baijiu is mellow only when its alcohol content is between 52-54 degrees. The quality of sauce-aroma Baijiu obtained through seven rounds of high-temperature fermentation and distillation is better, and its alcohol content is approximately 53 degrees.

It is precisely because of this brewing process that the 53% alcohol content of sauce-flavored liquor gives it its unique taste. The 53% sauce-flavored liquor has a mellow taste. If you don't believe me, you can compare it with liquor of different alcohol contents. The 53% sauce-flavored liquor tastes elegant and delicate, with a lingering aftertaste.

During the brewing process of Luzhou-flavor liquor, the production process of "cutting off the head and tail and taking the middle" results in a liquor with a degree of about 52 degrees.

The experiment concluded that when 53.94mL of pure alcohol is mixed with 49.83mL of water, the volume of the mixture is not 103.77mL, but rather 100mL, resulting in a volume reduction of 3.77mL.

When the alcohol content is at 53%, the water molecules and alcohol molecules are more tightly associated. Coupled with more than three years of storage, the sauce-flavored liquor is milder, with high alcohol content but not strong, making it an acceptable alcohol level for the general public.
