Unlike new wines, which sometimes encounter a lull in the market, aged wines continue to be in high demand. Why is it that aged wines thrive in the wine market?
This is because all good aged wines have such characteristics.
1. Old wine tastes good
The aged Baijiu lacks the irritation in its characteristic aroma, presenting its inherent aged flavor in a harmonious whole. The aroma and taste of aged Baijiu complement each other, with the aroma outweighing the taste. At the same time, the aftertaste is clean and the liquor flows smoothly.
The main components of Baijiu are alcohol and water. After prolonged storage, alcohol molecules undergo a complexation reaction with water molecules, forming long-chain molecules. This is the main factor that makes Baijiu mellow. Due to the increased molecular weight of the complexed molecules between alcohol and water, aged Baijiu tends to have a longer finish in the mouth. Delicacy is also one of the characteristics of aged Baijiu.

During the long storage process, aged liquor continuously absorbs the essence of time, naturally producing various ester compounds, which gives it a charming mellow aroma, commonly known as "mellowing".
Not only that, aged liquor is mostly brewed from grain, and due to its craftsmanship and brewing environment, its quality is relatively good; meanwhile, the stock of aged liquor is limited.
Aged liquor possesses significant historical and cultural value, as well as artistic value. Liquor with a long vintage has collectible value.
Third, aged liquor has high artistic value
Artistic value is an additional aspect that enhances the collectible value of aged liquor. For instance, liquor with unique bottle designs, strong artistic appeal in the label, or exotic bottle materials holds collectible value.
Like scarce resources such as jade, Hetian jade, and mahogany furniture, aged wine is becoming increasingly rare, yet its popularity is on the rise.
True aged wine indeed has many advantages, but due to the challenges in appraisal and preservation of aged wine, there are still few good aged wines on the market, and collectors need to be cautious when selecting and investing in them.
